The guitar pick necklace is a great idea. Make her a bracelet with one of the guitar strings and add a matching pick to that, too. Give her a picture of yourself in a cheap, cute little frame. Cooking a little dinner is a monstrously good idea, too. Perform an original melody for her on your guitar. You don't have to sing if you don't want. (Instrumentals are nicer if you ask me.) You could give her flowers that are NOT roses. White or red carnations are inexpensive and smell lovely. Give her a single blossom if you want. She's a lucky girl. Well, aren’t YOU a keeper!?!
